As Promised: 3 Minute Cake (Mug Cake)

This is how it looks straight from the microwave. The mug gets messy!
Only simple recipes here--no long lists of hard to find ingredients, no hours in the kitchen. I like simple, pure, wholesome food. (So I recommend organic, chemical free foods as much as possible. Don't even get me started.) So, of course, I am beginning with a dessert! Ha--"a little sugar is o.k. for a treat." Emphasis on a LITTLE sugar. (Don't get me started on artificial sweeteners either.)

My daughter found this little treasure online, and there are many variations of it. This one has proven to consistently come out well, even with slight variations. (We tend to use 2 tablespoons of oil, rather than 3, and occasionally throw in some chocolate chips.) Dust it with some powdered sugar, and enjoy! (This is a little dangerous, I have to admit. Although it is theoretically better to have a little bit of cake at your disposal, rather than a whole one, it does make it a little TOO easy to have cake any time. So don't say I didn't warn you!
P.S. The flour doesn't have to be cake flour, but it will be lighter in texture if you use it..  I use gluten free flour, and it turns out fine.  It's especially good with a gluten free baking mix I love, called Pamela's Baking and Pancake Mix. 
P.P.S. The mug in the picture is my favorite mug--a Mother's Day gift from my daughter!

3 Minute Cake

4 tablespoons cake flour

4 tablespoons sugar

2 tablespoons baking cocoa

1 egg

3 tablespoons milk

3 tablespoons oil

1 large coffee mug

Mix flour, sugar, and cocoa in mug. Add 1 egg. Pour in milk and oil and mix well. Cook in microwave for 3 minutes. Enjoy!
